Bhapa iilish is one of the most sort after dishes in Bhoomi. Bhapa means ‘steamed’, and the dish is named so because the fish is marinated in mustard, yogurt, turmeric and other spices wrapped in banana leaf and steamed to perfection. The magic happens when it is served. It is like the inauguration of a very special item because you have got to untie the string which envelopes the banana leaf slowly unravelling it and that’s when you see the delicate ilish glistening golden in shorshe (mustard paste) with a chili on top. The flesh falls apart with a light touch and overwhelms your palate with the strong taste of mustard. Once you grapple with what just hit your taste buds you will start relishing every bite of the delectable golden fish.
